Most days around my house tend to spiral out of control. What might have started out as a calm ‘birds-chirping’ kind of morning usually ends up as a poop-explosion, emergency-bath kind of situation. I am often still rocking my husband’s bathrobe by lunch time. While I’m not entirely proud of the morning madness, I love that my time is spent with my daughter and I know that she won’t be this little forever.

One thing that I have really come to rely on throughout these crazy days is my trusty crock-pot. I may have soldiered through the day accomplishing very little in terms of household chores, but when my hubby catches a whiff of my pot roast…I am a hero!

Here are three easy recipes that you can basically plop in the crock-pot and ignore until dinner time. Usually when I make these, I have enough left over to freeze for a few lunches throughout the week.

  • ½ yellow onion, diced
  • 1 green bell pepper, chopped
  • 1 teaspoon of sea salt
  • 1 package of taco seasoning
  • 1 (4 ounce) can of diced green chilies
  • 1 (16 ounce) can of black beans, rinsed and drained
  • 1 jar of your favorite salsa
  • 1 (16 ounce) can of corn
  • 2 (16 ounce) cans of diced tomatoes

*garnish with sour cream and tortilla chips


All you have to do is toss everything in the crock-pot and let it cook on low for 6 hours. Seriously, it is that easy and your house will smell so yummy.

  • 3 golden potatoes, quartered
  • 3 red potatoes, quartered
  • 1 yellow onion, chopped
  • 2 carrots, chopped
  • 1 stalk of celery, chopped
  • 2 tablespoons of minced garlic
  • 2 tablespoons of Italian seasoning
  • 2 (16 ounce) cans of low sodium chicken broth
  • 2 pounds of boneless beef chuck roast, cut into large pieces

Place the potatoes in the bottom of the crock-pot and then add everything else. Cook on low for 6-8 hours, or on high for 4 hours.

  • ½ yellow onion, diced
  • 3 cups of cooked chicken, chopped
  • 2 carrots, chopped
  • 1 stalk of celery, chopped
  • 1 cup of frozen peas
  • 2 ( 16 ounce) cans of low sodium chicken broth
  • 2 cups of cooked egg noodles
  • 1 tablespoon of minced garlic
  • 1 tablespoon of sea salt
  • ½ teaspoon of black pepper
  • 2 cans of condensed cream of mushroom soup

Add everything but the egg noodles and cook on low for 6-8 hours, or on high for 3-4 hours. When your family is ready for dinner, simply stir in the egg noodles and Bon Appétit!
